Sindhi Biryani Recipe πβ¨
For the rice:
- 2 cups Basmati rice π
- 4 cups water π§
- 1-2 whole green chilies πΆοΈ
- 2-3 cloves π§
- 2-3 cardamom pods πΏ
- 1 bay leaf π
- Salt, to taste π§
For the meat:
- 500 grams mutton or chicken, cut into pieces π
- 1 large onion, thinly sliced π§
- 2-3 tomatoes, chopped π
- 1/2 cup yogurt πΆ
- 1/4 cup cooking oil or ghee π₯
- 2-3 green chilies, slit πΆοΈ
- 1 tablespoon ginger-garlic paste π§
- 1 teaspoon cumin seeds π±
- 1 teaspoon coriander powder πΎ
- 1/2 teaspoon turmeric powder π
- 1 teaspoon red chili powder π₯
- 1 teaspoon garam masala πΆοΈ
- Fresh cilantro and mint leaves, chopped πΏ
Step 1: Prepare the Rice π
- Rinse the Basmati rice under cold water until the water runs clear. π¦
- Soak the rice in water for about 30 minutes, then drain. β³
- In a pot, bring 4 cups of water to a boil. Add the drained rice, salt, and whole spices. π₯
- Cook the rice until itβs 70% done (still slightly firm). Drain and set aside. π°
Step 2: Cook the Meat π
- In a large pot, heat oil or ghee over medium heat. Add sliced onions and sautΓ© until golden brown. π₯
- Add ginger-garlic paste and sautΓ© for a minute. π§
- Add the meat and cook until browned. Then, add chopped tomatoes and green chilies, cooking until the tomatoes soften. π πΆοΈ
- Stir in yogurt, cumin seeds, coriander powder, turmeric, red chili powder, and salt. Cook until the meat is tender. π½οΈ
- Sprinkle garam masala and mix well. Remove from heat. π₯
Step 3: Layer the Biryani π
- In the pot with the meat, spread half of the partially cooked rice evenly. π½οΈ
- Layer half of the chopped cilantro and mint on top of the rice. πΏ
- Add the remaining meat mixture, followed by the rest of the rice. π₯
- Top with the remaining cilantro and mint. π±
Step 4: Cook the Biryani π₯
- Cover the pot tightly with a lid. You can seal it with dough to trap the steam. π
- Cook on a low flame for about 20-25 minutes (this is known as βdumβ cooking). β³
- Once done, gently fluff the biryani with a fork. π΄

- Serve hot with raita (yogurt sauce) and salad. π₯
