Hyderabadi Mutton Biryani Recipe π½οΈ
For Marination:
- 500g mutton (goat meat) π
- 1 cup yogurt πΆ
- 2 tbsp ginger-garlic paste π§π§βπ³
- 2 tbsp red chili powder πΆοΈ
- 1 tsp turmeric powder π
- 1 tbsp garam masala πΏ
- 1 tbsp lemon juice π
- 1 tbsp coriander powder π±
- Salt to taste π§
- A handful of fresh coriander and mint leaves πΏπΏ
For Rice:
- 2 cups basmati rice π
- 4 cups water π§
- 2-3 cloves π°
- 2-3 cardamom pods π
- 1 cinnamon stick πͺ΅
- 1 bay leaf π
- Salt to taste π§
For Cooking:
- 2 onions (sliced and fried until golden) π§ π₯
- 2 tbsp ghee or oil π§
- 1 tbsp rose water (optional) πΉ
- 1 tbsp kewra water (optional) πΈ
1- Marinate the Mutton:
- Mix mutton with yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, lemon juice, coriander powder, salt, and chopped mint & coriander leaves πΏ.
- Let it marinate for at least 1 hour (preferably overnight for richer flavor) π°οΈ.
2- Cook the Rice:
- Rinse the basmati rice in water to remove extra starch ππ§.
- In a large pot, boil water with cloves, cardamom, cinnamon, bay leaf, and salt πΆοΈπ.
- Add rice to the boiling water and cook until 70% done (the rice should still be firm) β±οΈ.
- Drain the rice and set aside π.
3- Cook the Mutton:
- In a pressure cooker or large pot, heat ghee/oil π§.
- Add the marinated mutton and cook on medium heat until the mutton is tender and browned ππ₯.
- Add a little water if needed to cook the mutton fully (about 20-25 minutes in a pressure cooker, or longer on low heat) β³.
4- Layer the Biryani:
- In a large pot, add a layer of cooked mutton at the bottom π.
- Top with half of the cooked rice π.
- Sprinkle some fried onions π§ , fresh mint & coriander πΏ, and optional rose or kewra water πΉπΈ.
- Repeat with another layer of rice and topping until you use up all the ingredients.
5- Dum (Slow Cooking):
- Cover the pot tightly with a lid and cook on low heat for 20-25 minutes (you can use a tawa/griddle underneath to avoid direct heat) π₯.
- This slow cooking technique will help the flavors blend together beautifully!
Serveπ
- Once done, gently fluff the biryani π with a fork.
- Serve hot with raita (yogurt sauce) π₯ or a salad π₯!
