Beary Biryani recipe๐
Meat (Chicken/Mutton) ๐๐ (500g)
Basmati rice ๐ (1 ยฝ cups)
Onions ๐ง (2 large, thinly sliced)
Tomatoes ๐ (2, chopped)
Yogurt ๐ถ (ยฝ cup)
Ghee ๐ง (3 tbsp)
Coconut milk ๐ฅฅ (ยฝ cup, optional for extra richness)
Fresh mint leaves ๐ฟ (1/4 cup)
Coriander leaves ๐ฟ (ยผ cup)
Lemon ๐ (1, juice)
Ginger-garlic paste ๐ง (1 tbsp)
Green chilies ๐ถ๏ธ (2-3, slit)
Whole spices (cinnamon, cloves, cardamom, star anise) ๐ฐ (1-2 pieces each)
Ground spices (turmeric, cumin, coriander powder, garam masala) ๐ฟ (1 tsp each)
Salt ๐ง (to taste)

Water ๐ง (for cooking rice and meat)
Marinate the meat ๐๐:
- Mix the meat with yogurt, ginger-garlic paste, ground spices (turmeric, cumin, coriander powder, garam masala), lemon juice ๐, and salt ๐ง. Let it marinate for at least 30 minutes (preferably longer).
Cook the rice ๐:
- In a pot, bring water ๐ง to a boil with a pinch of salt ๐ง and whole spices ๐ฐ. Add basmati rice and cook until itโs 70-80% done. Drain and set aside.
Fry the onions ๐ง :
- In a pan, heat ghee ๐ง and fry the onions until golden brown and crispy. Set some aside for garnish.
Prepare the biryani base ๐ฒ:
- In the same pan, add ginger-garlic paste ๐ง, green chilies ๐ถ๏ธ, and the marinated meat. Sautรฉ until the meat is browned.
- Add chopped tomatoes ๐ and cook until they soften. Pour in coconut milk ๐ฅฅ (optional) and cook until the meat is tender.
Layer the biryani ๐:
- In a large pot, layer the cooked meat mixture with the partially cooked rice. Sprinkle fresh mint ๐ฟ and coriander leaves ๐ฟ on top.
- Drizzle some ghee ๐ง over the top and cover tightly.
Dum cook the biryani ๐ฅ:
- Cook the biryani on low heat for about 20-25 minutes to allow the flavors to meld together.

Garnish with fried onions ๐ง and fresh herbs ๐ฟ. Serve with raita ๐ถ and a salad ๐ฅ.
